Search for a frozen fries certificate of analysis and you mostly find single supplier documents and blank technical sheets. That is a gap, because the COA is the document a buyer's QA team reads more often than any other. It arrives with every lot, it is the only evidence of what that lot was, and it is the first thing a claims handler asks for when something goes wrong.

Four documents get called a quality certificate, and they prove different things.

A COA does not replace the other three, and the government certificates in particular travel separately, as set out in export documents for frozen food from India. It is the manufacturer's own measurement, which is exactly why its structure matters: a well-built COA can be checked against the specification and the lab reports in minutes, while a vague one cannot be checked at all.
Part 1 — Identity: tying the paper to the cartons
The identity block is what makes a COA evidence rather than marketing. It should name the product and its code, the lot or batch number exactly as printed on the cartons, the production date, the best-before date, the pack format and the quantity the certificate covers. If one container holds several lots, expect one COA per lot, or one document with a clearly separated result for each.
Part 2 — Physical results
Physical results are the ones a kitchen notices, and each maps to a field in frozen french fry specifications explained. Each should show the measured value, the specification limit and the sample size.
- Cut size in millimetres, measured frozen, against the nominal size and tolerance
- Length distribution, as the share of strips above the agreed length bands
- External defects by category — serious, major and minor — counted on a stated sample weight

- Colour after frying, against a named colour chart, with the frying time and temperature used

Codex CXS 114-1981 gives a reference for several of these: a 1 kg standard sample, a limit of 60 total external defect units per sample for strips of 5 to 16 mm cross-section, slivers at no more than 12% by mass, small pieces and scrap at no more than 6%, and burnt pieces at no more than 0.5%. A buyer's specification usually sets tighter numbers, and the COA should report against those. Length results matter most on long cuts such as extra long fries.

Part 4 — Microbiology
Frozen fries are par-fried and intended to be cooked again before eating, and the microbiological tests on a COA should follow what the buyer's specification and the destination actually require, not a generic list. Where tests are reported, each should state the organism, the result with units, the limit and the method. A certificate that lists a pathogen as absent without the sample quantity it was tested in is incomplete.
Part 5 — Accountability, and the red flags
Every result should cite a method and a limit, carry a pass or fail, and the certificate should be signed and dated by a named QA person. Then read it the way a claims handler would.
- Identical results across different lots — real measurements vary; copied ones do not
- Complies with no numbers — a conclusion without the data behind it
- No lot code, or one that does not match the cartons — the COA cannot be tied to the product
- A date before the production date — the certificate was written before the lot existed
- A result outside the limit marked pass — either the limit or the result is wrong
- Lab tests with no named, accredited laboratory — ask for the original report
None of these proves bad product. Each one means the COA cannot be relied on for that lot, and that is worth raising before the next shipment rather than after a complaint, ideally at the pre-shipment inspection, where the same lot can still be re-tested.
