Every buyer asks how long it takes. It is a fair question and it is the wrong first question, because a frozen fry does not degrade in proportion to days at sea. It degrades in proportion to temperature excursions, and excursions happen at the joints of a journey rather than along its length.
The joints are transhipment ports. A box that sails direct for thirty days is usually in better condition than a box that sails for eighteen with two transhipments, because the sailing time is refrigerated and the waiting time may not be.

Why transhipment is the real variable
At a transhipment port the container is discharged, moved in the yard and loaded onto a second vessel. During that window it needs a reefer plug. Well-run hubs plug promptly and monitor. Congested ones do not always, and the gap between the two is where a load is lost.
The uncomfortable part is that this window is largely invisible in the shipping documents. A bill of lading records a routing, not plug hours. Unless someone asked for the data, nobody can tell you afterwards what happened in the yard.
- Ask the carrier which hub the routing uses, and get it in writing rather than as a guess
- Ask what the hub's reefer monitoring practice is — good hubs will answer plainly
- Put a data logger inside the container, not only rely on the carrier's own record
- Agree who downloads it at discharge and within how many hours
- Agree a written tolerance so a brief, recovered excursion is not automatically a rejection
Setpoint discipline, and the sentence to put on the booking
Frozen potato products ship at a deep-frozen setpoint, and the number should appear on the booking and the bill of lading rather than living in an email thread. Documented setpoints are what makes a claim provable. Undocumented ones are what makes a claim an argument.
Two operational details are worth specifying alongside it. Ventilation should be closed for a frozen load, which is the opposite of a chilled produce setting and is a genuinely common error when a box is set by someone used to fruit. And pre-cooling matters: a container should be at temperature before stuffing, because a reefer unit is built to hold a temperature rather than to pull one down through a full load of cartons.
Free time, demurrage and the cost nobody quoted
Reefer free time at destination is typically shorter than dry free time, and reefer demurrage is more expensive because the box is drawing power. On long routings to markets where customs clearance can take days — a first shipment into a market with inspection regimes, for instance — that clock is a real commercial exposure.
Establish before booking how many free days apply at destination, what the daily rate is afterwards, and who bears it. Then check that answer against the realistic clearance time for a first consignment into that market, which is generally longer than for an established flow.
How this connects to the Incoterm
All of the above is really a question about where risk transfers. Under an Incoterm that transfers risk at the origin port, a transhipment excursion is the buyer's problem and they will price that risk into what they will pay. Under one that carries you further, it is yours.
Neither is wrong. What is wrong is agreeing a term without having had the transhipment conversation, because then both sides have priced a risk neither of them has looked at. On a first container to a distant market, the more useful negotiation is often about logger data and tolerance language rather than about the three letters in the contract.
A short checklist before a long routing

- Ventilation specified closed, and pre-cooling confirmed before stuffing
- Transhipment hub named, and its reefer practice asked about
- Logger placed, and a named person to download it within an agreed window
- Free time, demurrage rate and liability agreed against a realistic clearance estimate
- Carton and pallet specification checked against the number of handlings the routing implies
