Step one: measure your actual yield
Do not take yield from a supplier sheet. Measure it in your kitchen, with your fryer, at your service temperature, because fryer discipline moves the number as much as the product does.

Step two: convert yield into portions
Once you have the yield percentage, portion counts follow directly.

The practical reading is that eight percentage points of yield is worth roughly six portions per carton at 150g. If you serve a hundred cartons a month, that is six hundred portions - considerably more than most buyers extract from a price negotiation.
Step three: add oil
Oil absorbed into the fry is consumed, not recovered. It is a genuine ingredient cost and belongs in the portion calculation, but almost nobody includes it.
The fry arrives with 4 to 8 percent oil from par-frying and picks up more in your fryer. Total fat in the served product is typically 12 to 15 percent, so a 150g portion carries roughly 18 to 22g of fat, of which perhaps half came from your fryer rather than the factory.

Step four: add waste
Waste is the most under-measured line in fry economics. It has two sources: fries cooked and not sold before they went cold, and short pieces and slivers discarded from the bag.

A five percent waste rate is a five percent uplift on food cost, applied after every other calculation. It is also the line most directly improved by choosing a coated product where holding is unavoidable.

Take two products. Product A is quoted five percent cheaper per kilo but yields 70 percent and, being uncoated in a kitchen that holds fries, runs eight percent waste. Product B costs five percent more, yields 77 percent and runs three percent waste because it holds properly.
Per cooked kilogram, A's cheaper price is more than cancelled by its lower yield: dividing by 0.70 rather than 0.77 raises its cost per cooked kilo by about ten percent relative to the yield-adjusted figure for B. Layer the waste difference on top and B is meaningfully cheaper to serve, despite the higher invoice.
Using this in a supplier negotiation
Yield turns a price conversation into a specification conversation, which is a better conversation to have. Instead of asking for a lower price, ask what dry matter range the supplier holds to and whether they will commit to it contractually.
