Chile and Peru are usually approached together because a Pacific-coast routing serves both and because the label design work overlaps almost completely. Treating them as one regulatory market, though, is the mistake that costs a quarter.
Peru front-loads. Chile does not. If you plan a simultaneous launch on a Chilean timeline, the Peruvian consignment sits.
Peru — the Registro Sanitario is the critical path
Processed foods marketed in Peru require a Registro Sanitario issued by DIGESA, the environmental health directorate of the Ministry of Health. It is applied for by the Peruvian importer, not by you, and it attaches to the product and the responsible company. Until it exists the product cannot be marketed, which makes it the item on the critical path.
The application draws on documents you supply, so your responsiveness is a direct input into how long it takes. Assemble the pack once, properly, and reuse it: a certificate that has to be re-requested because it was sent as a phone photograph adds a week for no reason.

Plant health and border inspection involve SENASA depending on the product and its presentation. Have the importer's customs agent confirm which agencies touch your specific consignment, because a processed frozen potato product is not always routed the same way as a raw agricultural one.
Chile — no registration, but the label decides everything
Chile does not operate a general pre-market registration for a product of this kind. The Reglamento Sanitario de los Alimentos sets the standards, and enforcement runs through the regional SEREMI de Salud, with checks at import and in the market. Plant-health matters sit with SAG.
That sounds like the easier market and in timeline terms it is. What Chile does instead is enforce the strictest front-of-pack regime of the three Pacific markets, and it enforces it hard. Chile pioneered the black octagon and has extended it over successive phases, tightening thresholds as it went.
The consequence for a fry exporter is direct: a seasoned SKU that carries no mark in one market can carry two in Chile. Because the thresholds have moved over time, a nutritional assessment done for a previous shipment is not evidence for the next one.

The specification decisions behind both labels
Both regimes assess the product as sold. For frozen fries that means the numbers are set by applied salt, oil uptake at par-fry, the frying medium and any coating system. These are line decisions, made in Gujarat, months before anyone in Santiago or Lima sees a bag.
The practical discipline is to run the assessment against real analytical data for the exact SKU, in both markets, before artwork is commissioned. A plain 9mm straight cut and a seasoned coated cut are different products for this purpose even when they leave the same freezer on the same day.
Routing, transit and the cold chain
Pacific-coast South America is a long routing from the Indian west coast with transhipment as the norm. Valparaiso and Callao are both well served but the connection points vary by carrier and season, and the plug time at transhipment is where cold-chain evidence usually goes missing.
